Emilio Lustau 2021 en Rama Fino Sherry del Puerto de Santa Maria 500ml
This En Rama Fino captures the freshest, most vital expression of flor-aged Sherry—vivid, saline, and nut-tinged—with brisk tension and complexity. It’s a sharp, approachable yet layered fino that invites immediate drinking yet rewards thoughtful attention.
Origins & Craftsmanship
Lustau’s En Rama bottlings are selected from exceptional barrels within their solera systems and bottled with minimal filtration (a light “coffee filter” pass) to preserve texture, aromatics, and phenolic nuance. It belongs to the 3 En Rama series, with each bottling drawn from their three allowed municipalities in the Jerez sherry triangle—this one from El Puerto de Santa María.
In 2021, only 2 out of 347 casks were chosen for bottling under En Rama from El Puerto, meaning this is a deliberately rare, delicate selection.
The wine has undergone biological aging under flor in the humid, coastal solera house of El Puerto, giving it the hallmark flor character (nutty, saline, yeasty) while preserving vividness and brightness.
Tasting Profile
Nose: Pale gold with bright yellow reflections. Aromas of fresh pastry dough, roasted almonds, and subtle smoky wood interplay with flor yeast characters—sea spray, lightly toasted yeast, and warm bread crust.
Palate: Dry, clean, and brisk. Saline minerality, Mediterranean sea breeze, green almond, and citrus peel drive the mid-palate. The flor layer gives a yeast accent and delicate savory edge.
Finish: Crisp, saline, and lingering. The finish is marked by light bitterness from citrus pith and a nutty echo. The acidity carries the wine through, leaving a refreshing, chalky dryness.
