Honig’s “Classic” Sauvignon Blanc is crafted to showcase crisp aromatics and vibrant flavor while staying impeccably balanced. The 2024 blend is 99% Sauvignon Blanc with 1% Sémillon, sourced from a mix of Napa County and Lake County fruit (with a sustainably farmed Rutherford vineyard playing a key role alongside nearby vineyards).

Winemaking is precision-first: grapes are picked during cool night and early-morning hours to preserve aromatics, then whole-cluster pressed. The juice is settled and racked clean, then fermented at moderately cool temperatures in stainless steel, using multiple yeast strains selected to build Sauvignon Blanc’s expressive perfume and citrus detail. The wine is then aged on light lees in stainless steel prior to blending and bottling, giving a subtle creamy glide without sacrificing lift or snap.
