Origins & Craftsmanship
Koch El Mezcal is an Oaxacan producer founded by Carlos Moreno, built around collaboration with a network of mezcalero families across multiple villages in Oaxaca. The project focuses on preserving traditional production techniques while supporting local producers and sustainable agave cultivation.

The Elemental Espadín expression is made from 100% Maguey Espadín, the most commonly cultivated agave used in mezcal production. Espadín agaves typically mature in about 7–9 years, offering a balance of yield and flavor that makes them a foundational agave for artisanal mezcal.

Production follows traditional artesanal mezcal methods:

  • Agave piñas are roasted in underground earthen ovens, giving mezcal its signature smoky character.

  • The cooked agave is crushed using a tahona-style stone mill.

  • The mash undergoes natural fermentation with wild yeast in wooden vats.

  • The liquid is then double-distilled in copper stills.
