The distillery sources pure spring water from the Sedountas River, while botanicals include Lisvori-grown aniseed, fennel from northern Evia, Chios-mastic, local salts and other secret herbs. The distillation is carried out slowly in handmade copper stills, with only the central “heart” cut of the run retained. The final spirit is adjusted to ~40% ABV and bottled under the brand’s iconic label, representing over a century of continuous heritage.
