Pascal Jolivet 2022 Sancerre Les Caillottes

Pascal Jolivet 2022 Sancerre « Les Caillottes » is a benchmark expression of top‑quality Sancerre: 100% Sauvignon Blanc sourced from a single high‑end chalky limestone (caillottes) parcel planted on south‑facing slopes near Bué in the Loire Valley .

🌿 Terroir & Winemaking

  • Vineyard: From 3.5 ha of ~40‑year‑old vines on white chalk soil with excellent drainage.

  • Vinification: Manual harvest, careful sorting, gravity-fed, stainless-steel fermentation with natural yeasts, followed by 8 months on fine lees to develop texture.

  • Aging potential: Recommended to keep up to ~10 years under proper conditions .

🍋 Tasting Profile

  • Aroma: Bright citrus zest with orange marmalade, roasted green apple, quince, Korean pear, and a chalky/flinty note

  • Palate: Crisp, powerful, with lively acidity, chalky minerality, and flinty stone nuances. Elegant structure speaking to both richness and tension

  • Finish: Long, refreshing, and cleansing—balanced with purity and depth .

🍽️ Food Pairings & Serving

  • Best served: Around 10 °C to highlight freshness and aromatics

  • Pair with: Shellfish (oysters, clams, scallops), meaty or oily fish (e.g. mackerel, tuna), freshwater fish, chicken, light cheeses (especially goat), and creamy vegetables .

A refined and expressive Sancerre that balances powerful minerality with elegant texture and vibrant fruit. Ideal for those who appreciate crisp, structured whites with a savory depth and food-friendly acidity. It’s already enjoyable but has the structure to gain complexity with a few years of cellaring.

"Shows impressive concentration and savory power, with notes of sweet hay and jasmine overlaying a rich well of herb oil, lime zest, parsley and bitter herbs. This turns supple and round on the palate, with a silky feel to its crunchy nectarine element. Ends on a fresh note, offering cooling wet stone minerality. Drink now through 2029. " Wine Spectator 92 Points
