Origins & Craftsmanship
Terroir is a signature expression from St. George Spirits (Alameda, California), crafted with a philosophy of “place-first” distillation. The distillers draw on local Californian flora—Douglas fir, California bay laurel, coastal sage, and more—to create a gin rooted in its wild surroundings.
In production, the fir and sage are distilled separately to better control their impact, while botanicals like bay laurel and juniper are vapor-infused. The remaining botanicals (coriander, angelica, orris, citrus peels, etc.) go directly into the pot. Coriander in particular is wok-roasted before distillation to intensify its earthy character.
This spirit is bottled at 45 % ABV, non-chill filtered, and without added coloring. Its character is intentionally rugged and bold—St. George likens it to “a forest in your glass.”
