The piñas are typically roasted in wood-fired pit ovens using mezquite and other local woods, then crushed, fermented in wooden tubs and distilled in small copper stills. The bottling strength is 47% ABV, and the production is artisanal, reflecting the traditional methods of master distiller Paciano Cruz Nolasco and his son Marcos Cruz Méndez.
