This whiskey is produced by McCarthy’s (by Clear Creek Distillery) in Hood River, Oregon. It is distilled from 100% peat-malted Scottish barley and matured for six years in Oregon white oak before being finished in Pedro Ximénez (PX) sherry casks. The result: a frontier American single malt that draws upon Scotch tradition (peat, barley) and Pacific Northwest innovation (Oregon oak, craft distillation). The bottling is non-chill-filtered and bottled at cask-strength (112.2 proof in the PX-cask finish version) for full flavour impact.

Nose: Begins with warm saddle-leather and sweet tobacco, evolving into dark hazelnut butter, bergamot tea and the lingering smoke of cold camp-fire embers.
Palate: Rich and full-bodied—jammy black cherry and raisin give rise to brown sugar and toasted oak, with the peat smoke rising beneath and bitter-chocolate and chicory notes emerging in the second act.
Finish: Long, warming and subtly wild—the peat smoke amplifies, giving way to tobacco-leaf, sawdust, and a final echo of wood smoke and dark fruit skin.
