Milk and Honey Distillery Classic Single Malt Whisky
The Milk & Honey Classic Single Malt is a polished and accessible expression of Israel’s pioneering single-malt whisky craft. It delivers smooth vanilla-honey sweetness, light oak nuance and subtle warm-climate character — versatile enough for everyday sipping, yet with enough depth to reward attention.
Origins & Craftsmanship
Produced by Israel’s first dedicated single-malt distillery, the Milk & Honey Distillery near Tel Aviv, this “Classic” edition is crafted from 100% malted barley, distilled in traditional copper pot stills and matured under the Mediterranean sun. The whisky is aged in a combination of ex-bourbon barrels and custom red-wine STR (shaved, toasted, re-charred) casks, leveraging the accelerated maturation effects of the warm local climate. It is bottled at 46% ABV, with no added colouring and no chill-filtration, allowing the spirit’s natural character to shine.
Critics Reviews
-
Reviewers note its “gentle vanilla sweetness, followed by light oak and floral notes” and a palate of “vanilla, caramel and honey sweetness balanced by woody notes and light black pepper spiciness.”
-
One independent tasting described it as “an extremely competent and well-constructed malt whisky… satisfying for many drinkers and excellent value.”
-
The distillery’s broader reputation is boosted by recognised awards and its position as a craft-whisky innovator in a non-traditional region.
Tasting Profile
-
Nose: Soft and inviting, with vanilla pod, honeycomb, delicate floral lift and a background of fresh oak.
-
Palate: Light to medium body; caramelised malt sweetness leads, followed by honey, subtle spice (black pepper), and oak tannin-touch. The warm climate maturation adds a gentle warmth without heavy wood domination.
-
Finish: Smooth and moderately long, leaving traces of roasted cereal, light oak, honey and a faint spice kick — inviting another sip rather than imposing itself.
